Preparation of CINNAMON MUFFINS

APPLE CINNAMON MUFFINS

 
510g Oat bran
57g Brown sugar
6g Cinnamon
14g Baking powder
57 g. Raisins
119ml Milk
178ml Frozen apple juice concentrate
2 egg Whites
25ml Vegetable oil
1 medium apple, chopped
Cinnamon Magic
 

Mix the wet ingredients together in a large bowl. Add the combined dry ingredients and mix lightly. To this batter, add the chopped apples and mix again. Spoon the batter into greased muffin tins to 2/3 full. Sprinkle each with ample grindings of Cinnamon Magic. Bake at 215 degree C. for 17-20 minutes.

 

BLUEBERRY BANANA SCONES


283g Flour
113g Whole wheat flour
57g Sugar
1 tsp Baking powder
½ tsp Baking soda
57g Cold butter (cut in chunks)
113g Plain yoghurt or buttermilk
2 bananas (mashed)
113g Blueberries
57g chopped walnuts, optional
Cinnamon Magic

Add all the dry ingredients and butter to a blender and whir until crumbly. Add the yoghurt, banana, blueberries and nuts. Mix carefully. Mound this dough on a greased baking sheet and then score into 6 triangles. Sprinkle the top with Cinnamon Magic. Bake at 180 degrees C. for 25 minutes.
